Wild Thyme (Greek: Thymari) or , ''Thymus capitatus'', is one of the oldest herbal remedies grown in Crete. For many, it defines the smell of Crete. Thyme grows from sea level up to 2000m. It contributes significantly to honey production and in fact, thyme honey is widely considered to be the best. 

 

Thyme is often used to flavour meats, soups and stews. It is also used to season lamb, tomatoes and eggs. It energises the mind and revives the senses.
